There are low carb vegetables that can fill up your diabetic healthy diet plan. These also contain fiber, minerals and vitamins even though they are low in calories. Everyday Health and dLife listed the following low carb vegetables that are good for diabetics:
1. Cucumber
There are only 2 grams of carbs in a one-half cup of sliced cucumber yet it has caffeic acid that soothes the skin irritations and prevents swelling. It is also rich in vitamin C. The skin of cucumber contains potassium, magnesium and fiber that help lower blood pressure.
2. Romaine Lettuce
A cup of shredded romaine lettuce has only 1.5 grams of carbs. It is a great source of beta-carotene and vitamin C. This inhibits the oxidization of cholesterol. It also contains potassium that can lower blood pressure.
3. Sugar Snap Peas
A half cup of a raw sugar snap peas has 1 gram of carbs. Snap peas is a great source of antioxidants such as Vitamin C, Vitamin E and zinc. It also has anti-inflammatory nutrients like the omega 3-fatty acids. The anti-inflammatory and anti-oxidants can help reduce the risk of diabetes.
4. Spinach
Half a cup of cooked spinach has 3.5 grams of carbs. Spinach has antioxidants that prevent the risk of high blood pressure. It also has flavonoids that serve as anti-inflammatory and anti-cancer agents.
5. Red Bell Pepper
A half a cup of diced red bell pepper has 3 grams of carbs. Red bell peppers are rich in vitamin A and C which are two powerful antioxidants. They are also rich in vitamin K, B6 and folic acid.
6. Okra
There are only 3.5 grams of carbs in one-half cup of cooked sliced okra. Okra is high in fiber and protein. It also has glutathione which supports the immune system.
7. Green Pepper
One-half cup of sliced green bell pepper has only 2 grams of carbs. It is also a great source of vitamin A, C and K. Green bell pepper also contains folic acid that lessens the levels of homocysteine which is an amino acid that heightens the risk of heart disease and stroke and destroys the blood vessels.
